Mezzavilla Canavese Bianco DOC 2021

Grapes harvested early in the morning to keep the bunches at the lowest possible temperature. Then placed in a cold room of 4°C for at least 7 days to obtain a natural cold maceration.
At the end of the cold storage period, grapes are immediately destemmed and pressed, obtaining the must which will then undergo a natural clarification. The clear must is then fermented at a controlled temperature, initiated with a “pied de cuve” to allow the yeasts to do their work of alcoholic fermentation.
This is followed by a maturation in stainless steel on the fine lees for natural stabilization for about 4 months, giving complexity to the wine. The wine is then bottled and is head for 12 months in bottle before release/sale.
